Lasagna III



Lasagna III

1 lb. ground beef, browned
2 onions, chopped
1 28 oz. can tomatoes
1 15 oz. can tomato sauce
1 16 oz. pkg. lasagna noodles
1 6 oz. can tomato paste
2 bay leaves
2 tbs. each of oregano, parsley, basil
2 cloves garlic, minced
1 tsp. salt
pepper
1 lb. each of cottage cheese, shredded mozzarella, and shredded Monterey jack
2 eggs
Parmesan cheese

Add onions to browned beef and cook till transparent. Stir in tomatoes, tomato sauce, tomato paste, bay leaves, oregano, parsley, basil, garlic, salt, and pepper. Simmer 2 hours. Cook noodles, drain, set aside. Combine cottage cheese and eggs, set aside. Combine mozzarella and Monterey jack cheeses. Grease a 9 by 13 and a 9 by 9 pan. Using half of each mix, layer first noodles, then meat sauce, then cottage cheese mixture, then grated cheeses. Repeat with remaining halves in second pan. Sprinkle tops with Parmesan cheese. Bake at 350 for 45 minutes. Serves 6 to 8.

Baked Beans

1 qt. can Pierce’s pork and beans
5 strips bacon
1 medium onion, finely ground
1 green pepper, finely ground
1 c. catsup
½ c. brown sugar
1 tsp. Worcestershire sauce

Cook bacon in frying pan. Remove strips, sauté onion and pepper. Place beans, onion, pepper and bacon in baking dish. Add catsup, brown sugar, and Worcestershire sauce. (If dry add a bit of water) Bake at 250 for 2 to 2 ½ hours without cover. Can also be cooked in fry pan on stove, simmer ½ hour on low after adding sauce ingredients.


 Carrie’s Potato Casserole

1 32 oz. pkg. Ore Ida shredded or diced frozen potatoes
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
½ c. grated cheese (for top)
Small onion diced fine
1 tbs. sour cream

Mix together and place in 9 by 13 pan. Bake at 350 for 45 minutes. Put cheese on top last 10 minutes.

Not My Monkeys... Oh Wait....



Banana Bread

½ c. shortening
1 c. sugar
2 eggs
1 c. crushed bananas
1 c. chopped nuts (optional)
2 c. flour
1 tsp. soda
¼ tsp. salt

Combine all ingredients. Pour into 1 large loaf pan or 2 small. Bake at 350 for 45 minutes.

Lasagna II



Lasagna II

1 lb. ground beef, browned
2 8 oz. cans tomato sauce
1 tsp. salt
1/8 tsp. pepper
¼ garlic salt
½ tsp. Italian seasoning

Simmer the above for five minutes.
Cook 8 oz. lasagna noodles, drain.
Layer in greased casserole dish with:
1 c. cottage cheese
1 c. sour cream
6 chopped green onions or 1 white onion minced

Top with ¾ cup shredded cheese, any.
Bake at 350 degrees for 20 to 25 minutes or until a tsp. out of the middle is hot. This freezes wonderfully so I usually triple it.

Mama's Meatballs



Snappy Glazed Meatballs

1 lb. ground beef
¼ c. dry bread crumbs
1 tsp. salt
1 small onion, chopped
1 egg, slightly beaten
1 c. chili sauce
1 c. grape jelly

In medium bowl, combine first five ingredients, mix well. Shape into 1 inch balls. In medium skillet, brown meatballs, turning occasionally, drain excess fat. Add remaining ingredients, simmer 15 minutes, stirring occasionally to coat meatballs with glaze. Serve warm in chafing dish or electric fry pan. Makes 24 to 30 balls.
