Baklava

Baklava


1 pound shelled walnuts, coarsely ground
1 pound shelled almonds, coarsely ground
1 cup granulated sugar
2 tablespoons ground cinnamon
1/2 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon ground cloves
1/2 teaspoon mace

1 pound phyllo pastry
1 pound butter, melted
Whole cloves

Syrup:
3 cups granulated sugar
3 cups water
1 teaspoon fresh lemon juice
1 stick cinnamon
6 whole cloves
Peel of one orange, not grated
1 1/2 cups honey
1 teaspoon vanilla


Heat oven to 300 degrees. In a large bowl mix nuts with sugar and spices. Brush bottom of a 10 1/2-by-14 1/2-by-2-inch baking pan with melted butter. Then brushing each with melted butter, place six sheets of phyllo in the bottom of the pan. Sprinkle on a thin layer of the nut mixture. Continue alternating phyllo, butter and nut mixture until all the nuts are used. Again, buttering between each layer, add 6 to 8 more phyllo sheets to the stack in the pan. Butter the top.
With a sharp, serrated knife, cut the baklava into vertical strips a full 1-inch wide. Be sure to cut to the bottom of the pan. Then cut the strips diagonally 1-inch wide to form the small, traditional diamond-shaped pieces. (It is important that the width of the diagonal cut be the same as the vertical cut.) Stick a whole cove in the center of each piece.
Bake for approximately 1 hour and 10 minutes, until evenly browned.
During the last 45 minutes of baking, prepare the syrup, by combining the sugar, water, lemon juice, cinnamon stick, cloves, orange peel and honey in a pan. Bring to a boil and boil for 20 to 25 minutes. Add in the vanilla just before removing from heat. Discard the cinnamon stick, cloves and orange peel.
Remove the baked baklava from the oven and immediately, but carefully, pour all but 3/4 cup of the boiling syrup over it. Return the 3/4 cup to the heat and boil for an additional 5 minutes. Meanwhile, return the baklava to the oven and bake 3 minutes longer. Remove from the oven and pour the remaining syrup over the top. Allow the baklava to cool at room temperature for at least six hours before using. Makes about 120 (small) pieces.

Lasagna IV



Lasagna IV

Lasagna noodles, cooked and drained
1 lb. each of mozzarella, Colby jack, and mild cheddar cheeses, shredded together
1 lb. ground beef, browned
2 tbs. each minced onions, minced garlic
1 tbs. each parsley, oregano
1 jar Chunky Garden Style Garden Combination Ragu sauce or your home canned equivalent
1 6 oz. can tomato paste
Parmesan cheese to taste

Mix spices, paste and sauce together. Layer with noodles, beef, and cheese in 9 by 13 pan. Sprinkle evenly with Parmesan cheese. Bake at 350 for 30 minutes.

Stop and Smell the Flowers

One of the old fashioned fiber crafts I'm teaching myself is hairpin lacemaking. This was pretty popular in the '60's and '70's with the yarn artists. I love the airy look it gives to shawls and afghans. I found this tutorial for floral hairpin lace on YouTube recently,  and I think you'll enjoy it, too!

Prettige Kerstdagen



Dutch Chicken-pops

4 chicken breasts, skinless and boneless
8 small wedges Edam or Gouda cheese
¼ to ½ cup flour
2 eggs, lightly beaten
Fine breadcrumbs
Oil for deep-frying

Cut chicken breasts in half. Pound to about ¼ inch thickness. Place wedges of cheese on each half breast, roll and tuck in edges so cheese is enclosed. Secure with skewer, toothpicks or cooking clamps. Coat with flour, dip into eggs, and then roll in crumbs. Allow to dry 10 to 15 minutes. Fry in hot oil at 325 until golden brown, about 10 minutes. Makes 4 servings.

Worth A Trip Over The Border



Canadian Caramels

1 c. light brown sugar
1 c. Roger’s golden syrup or white sugar
1 14-oz can sweetened condensed milk
½ c. real butter
2 c. chopped cashews (optional)

Combine ingredients, except cashews, in a medium saucepan. Heat to just about 250 on a candy thermometer. Spray or butter an 8x8 glass pan. Sprinkle nuts evenly on bottom if desired.  Pour caramel on top of nuts, do not stir. Cool just until touchable. Pull and roll into balls, place on sprayed cookie sheet. Let cool completely. Can be finish-cooled in the fridge if needed fast.

Lasagna III



Lasagna III

1 lb. ground beef, browned
2 onions, chopped
1 28 oz. can tomatoes
1 15 oz. can tomato sauce
1 16 oz. pkg. lasagna noodles
1 6 oz. can tomato paste
2 bay leaves
2 tbs. each of oregano, parsley, basil
2 cloves garlic, minced
1 tsp. salt
pepper
1 lb. each of cottage cheese, shredded mozzarella, and shredded Monterey jack
2 eggs
Parmesan cheese

Add onions to browned beef and cook till transparent. Stir in tomatoes, tomato sauce, tomato paste, bay leaves, oregano, parsley, basil, garlic, salt, and pepper. Simmer 2 hours. Cook noodles, drain, set aside. Combine cottage cheese and eggs, set aside. Combine mozzarella and Monterey jack cheeses. Grease a 9 by 13 and a 9 by 9 pan. Using half of each mix, layer first noodles, then meat sauce, then cottage cheese mixture, then grated cheeses. Repeat with remaining halves in second pan. Sprinkle tops with Parmesan cheese. Bake at 350 for 45 minutes. Serves 6 to 8.
